Beetroot Dip with Sour Cream and Chives

• 450g Beetroot
• 1/2 cup sour cream
• 2 tablespoons chives (chopped finely)
• 1-2 cloves garlic (minced)

Prep: 10 minutes | Cook: 40 minutes

1.

Boil the beetroot until soft, about 30-40 min, depending on the size of your beetroot. Drain and allow to cool slighty. Once cooled enought to handle, peel and trim the beetroot.

2.

In a food processor, blend the beetroot until smooth. Remove from food processor and stir in remaining ingredients. the beetroot dip is now ready to serve.
