Hot Caramel

Ingredients (serves 6)

  • 750ml (3 cups) milk
  • 150g soft caramels (such as Pascall Columbines)
  • Pinch of ground nutmeg
  • Marshmallows, to serve (optional)
  • Kahlua liqueur, to taste (optional)

Method

  1. Place the milk in a saucepan over medium-low heat. Add the caramels and stir for 5 minutes or until almost melted.
  2. Remove from heat. Stir for a further 1-2 minutes or until the caramels melt and the mixture is well combined.
  3. Pour among mugs and sprinkle with nutmeg. Add marshmallows or a dash of Kahlua, if desired, for the adults

Ingredients (serves 2)

  • 125ml (1/2 cup) thickened cream
  • 3 tbs nestle top 'n' Fill caramel
  • 30ml butterscotch schnapps
  • Whipped cream, to serve
  • Ground nutmeg, to serve

Method

  1. Place the thickened cream and caramel in a small saucepan over medium heat. Whisk until combined. Bring to a simmer. Remove from heat. Stir in the butterscotch schnapps. Set aside for 5 minutes to cool.
  2. Pour the caramel mixture into 2 serving glasses. Top with whipped cream and nutmeg.
