Tomato Meatloaf

Ingredients

Serves: 8
  • 1 tablespoon vegetable oil
  • 2 large onions, peeled and chopped
  • 2 large celery stalks, chopped
  • 1 large green capsicum, seeded and chopped
  • 3 garlic cloves, crushed
  • 1 kg lean minced beef
  • 1 cup fresh breadcrumbs (white or wholemeal)
  • 1 egg, lightly beaten
  • salt and freshly ground black pepper
  • 1 cup tinned chopped tomatoes
  • ¼ cup tomato sauce

Preparation method
Prep: 35 minutes | Cook: 1 hour 15 minutes
