Potato Souffle

Ingredients -
2 cups hot mashed potatoes
1/2 cup parmesan cheese
1tbls butter
2 eggs
Extra butter
1/2 cup matured cheese
breadcrumbs

Method -
Add Parmesan, butter pepper and egg yolks and salt.
Beat egg whites stiffly and fold into mixture put into dish, sprinkle with breadcrumbs pieces of butter and cheese bake in mod oven for 20 mins until crispy serve with meat dishes
