Ingredients -
1 cup plain flour
1/2 cup SR flour
1 egg
1 cup brown sugar
1/2 oil
1tsp vanilla essence
1/4 cup finely chopped macadamia nuts
3/4 cup chocolate chips
3/4 cup toasted shredded coconut
Method-
1. Preheat oven to mod 180c. Lightly grease 2 flat baking trays or line with baking paper. Sift the flours into a bowl and set aside.
2. Beat the egg and sugar until light and fluffy. Add the oiland vanilla, mix until combined. Stir through the nuts, chocolate and coconut. Add flour and mix to combine.
3. Roll walnut-sized balls and flatten slightly. Place onto lined trays and bake for 12-15mins. Cool before storing.
