Chocolate Mousse Tart

Ingredients

Serves: 8
  • 215 g (1 3/4 cups) plain chocolate biscuit or digestive biscuit crumbs (about 9-12 biscuits)
  • 1 large egg white
  • 2 tablespoons honey
  • 7 g (2 tsp) gelatine
  • 225 g (1 cup) caster sugar
  • 125 g (1 cup) unsweetened cocoa powder, plus extra for dusting
  • 80 ml (1/3 cup) milk, warmed
  • 1 teaspoon vanilla essence
  • 375 ml (1 1/2 cups) cream, for whipping
  • 85 g (2/3 cup) dark chocolate, for curls
