Ingredients -
125g plain Chocolate bisuits
75g butter - melted
250g dark cooking chocolated - chopped
1/4 cup water
3tsp gelatine powder
2 x pkts cream cheese - at room temperature
1/2 cup cater sugar
2 eggs separated
1 cup cream
1 100g pkt cadbury flake garnish
Method-
1. Line a 22cm springform pan with plastic wrap
2. Place bicuits in food processor and processuntil finely crushed. Add butter and process until the misture is well combined. Transfer biscuit mixture to the prepared pan. Use a straight-sided glass to spread and press the mixture firmly over the base ofthe pan. Place in the fridge for 30 mins to chill.
3. Meanwhile, place the chocolate in a heat proof bowl over a saucepan half filled with simmering water, Use metal spoon to stir until the chocolate melts and is smooth.
4. Place water in a small heatproof glass. Sprinkle with gelatine and stir with a fork until dissolved.
5. Use a beater and beat the cream cheese and sugar and egg yolks in a medium bowl until smooth. Beat in the cream until combined. Add the chocolate and gelatine and stir until combine.
6. Use clean beaters and beat the egg whites until soft peaks form. Use a metal spoon to fold into the cream mixture until well combined. Pour filling into pan. Place in the fridge overnight or until set...garnish with flake.
