Put the sugar, cream and cocoa in a bowl. Beat cream until it is slightly stiff.

Roll out a piece of alfoil big enough to wrap the whole log.

Stick the biscuits together with the cream. Put them together, one behind the other to make a long roll. This should use about half the cream and it is easiest if you do this straight onto the alfoil.

Wrap the biscuit roll in alfoil and place in the fridge overnight. Cover the bowl of cream with glad wrap and refrigerate also.

The next day, unwrap the roll, place it on a serving dish or platter and spread the rest of the cream over it making sure the entire log is covered right down to the platter. (Don't do the underneath)

Make a bark effect on the log by scraping with a fork. If you like, you can decorate with icing sugar snow and a sprig of plastic holly.

Keep the log refrigerated until ready to serve. When you are ready to serve, cut small slices on an angle because this log is very rich.
