Marshmallow Shortcake
Ingredients
Serves: 10
2½ crushed weetbix
3/4 cup sugar
1 tsp baking powder
175g butter
1 cup coconut
1 cup flour
2 tab cocoa
Topping
2 dsp gelatine
2 cups sugar
food colouring (your choice-a couple of drops)
1 cup boiling water
vanilla essence
Preparation method
Prep: 15 minutes | Cook: 15 minutes

Melt butter and pour over dry ingredients. Mix well. Press into tin and bake at 180 degrees celcius for 15 mins.

Topping: dissolve gelatine in boiling water, add sugar, vanilla essence and food colouring. Beat till thick and fluffy. Cool. Pour over cookie base while still warm. Sprinkle with sprinkles or coconut.
