Choc-chip Cookies

Ingredients

  • 3/4 cup self-raising flour
  • 3/4 cup plain flour
  • 125g butter
  • 1/2 teaspoon vanilla essence
  • 1 1/4 cups brown sugar
  • 1 egg
  • 1/2 cup grated chocolate
  • 3/4 cup dark chocolate chips
  • 3/4 cup white chocolate chips

Method

1. Preheat the oven to a moderate 180 C (160 C fan forced). Line two flat baking trays with baking paper. Sift flours onto a sheet of baking paper and set aside.

2. Beat butter, vanilla, sugar and egg in a medium bowl. Fold through sifted flour and grated chocolate, mixing until just combined, then add dark and white chocolate chips.

3. Place tablespoonfuls of mixture 5cm apart on baking trays. Bake 18-20 min or until biscuits are golden brown. Allow to cool on the tray for 5 min, then transfer to a wire rack to cool completely. Drizzle with melted white chocolate to serve.
