Mars Peppermint Pie

20g Copha
1 mars bar chopped
2 cups rice bubbles

Melt mars with cofa, stir in rice bubbles and line a flan tin refridgerate

Filling-

250g cream cheese
1/2 cup thickened cream
1/2 cup caster sugar
2 tbls lemon juice

Topping-

2 mars bars
90g unsalted butter
few drops peppermint essence

Beat cream cheese and sugar until creamyh and soft.  Add cream and beat until combined Spread mixture over base - refridgerate

Melt mars bars with butter and essence.  Remove from heat and pour over cream filling - refridgerate
