Ingredients -
2 chicken breast fillets - cubed and cooked
1/2 cup vinegar
4 tbls sugar
1tbls soy sauce
2 cups water
3tbls cornflour
salt and pepper
onions and/or shallots
2 tbls chutney
1 red capsicum
1pkt cashew nuts
Method -
Place vinegar, sugar, sauce, water and cornflour, salt and pepper in a saucepan
Stir over heat until mixture has thickened
Chop onions and capsicum finely and add to sauce
Add chutney and allow to cook for 2-3 mins
Add chicken - sprinkle with cashews and serve with rice

Awesome! It's a hit! Everyone loved it! Tasted just like the chinese shop. I pretty much stuck to the recipe just guesstimated the measurments and threw the cashews in with it instead of on top. Great with the cashews!
