Stuffed onions (tomato, zucchini)

Ingredients -
Onions
White sauce
grated cheese
Corn kernels
capsicum
cayenne
salt and pepper

Method -
Peel onions leaving root intact - boil for 7-8 mins
Top and tail onions and scoop out centre
Chop up centre and add to white sauce.  Add cheese, corn, caps and seasonings
Place onions on greased tray and fill with filling 
Bake in mod oven for 30 mins

Can do the same with tomatos and zucchinis
