Potato Scones

  • 250 grams of mashed potato
  • 1 tablespoon butter
  • salt and pepper to taste
  • 1/2 cup plain flour
Place potato in a bowl and mix in the butter, salt and pepper.  Add the flour gradually – adding just enough to make a soft dough (you may not need it all!).  Knead gently, divide into equal 10 balls (or 8 depending on how big you want them).  Press gently to flatten and fry in a frying pan for a couple of minutes each side and cook until brown.  Serve with butter and jam.
