Custard Creams

  • 250 grams butter
  • 250 grams sugar
  • 3 cups Self Raising Flour
  • 3 small or 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup Custard Powder
Filling
  • 1 cup icing sugar
  • 1 heaped tablespoon Custard Powder
  • 1 teasoon Vanilla Extract
  • hot water
Combine the butter, sugar, eggs and vanilla and beat until creamy.  Add the flour and custard powder and roll into small balls and flatten with fork.  Bake until golden brown (about 10 minutes) in a moderate oven.  When cold – beat all filling ingredients togther and sandwich two biscuits together.
