Nachos

  • 500g Mince
  • 1 chopped onion
  • 1 can red kidney beans (this is an optional filler, also can use baked beans)
  • 1 can of diced tomatoes
  • chilli con carne recipe base (I use aldi mix but am sure other brands make this or you can add your own spices)
  • 3/4 cup water
  • mixed grated vegies to hide in the mince (carrot & zucchini are great for this)
  • 1 bag of corn chips
  • cheese to top the mince
Preheat oven to 180 degrees. Cook the onion in a pan and add the mince to brown. Add the vegies to soften slightly. Combine the water and recipe mix and add to the pan with the tomatoes and beens. Spread the chips on a oven tray and pour the mince mixture over the top, sprinkle cheese on top and bake until the cheese is melted. (leave in longer if you want the chips to get softer, we like them crunchy)
