Ingredients-
1/3 cup Marsala
250g cream cheese - softened
1/2 cup sweetened condensed milk
300ml thickened cream
1/4 cup lemon juice
1 pkt sponge biscuits.
Method -
Cut each sponge biscuit in half diagonally. Line a 23cm springform pan with plastic wrap. Arrange a layer of the halved biscuits around the base of pan, trimming if necessary to fit neatly. Brush biscuits with 2 tblsp of marsala. Beat cream cheese and condensed milk with mixer until smooth, then beat in 150 ml cream and continue beating until thick and creamy. Fold in lemon juice. Reserve the remaining cream in fridge. Spread cream cheese mixture over biscuit base then top with remaining layer of biscuits. Brush top layer with remaining Marsala. Refridgerate until firm. Serve with icing sugar, cinnamon and remaining cream.
