- 30 grams butter
- 4 eggs at room temperature, separated
- 250 grams caster sugar
- 150 grams plain flour
- 1 teaspoon baking powder
- 2 teaspoons vanilla extract
- 1 litre milk (full cream is best but you can use skim)
- pinch salt
- cinnamon
In a microwave proof bowl, melt the butter. Add the egg yolks and caster sugar and beat well with a whisk. Sift the dry ingredients well add to the egg mixture. Slowly at first beat in the milk and vanilla extract. Beat the egg whites until foamy and fold them into the milky mixture. our into a round greased pie dish. Sprinkle with cinnamon and bake at 180 degrees for 55 – 60 minutes. Serve hot or cold with a scoop of vanilla ice cream
