Apple Turnovers

  • 2 sheets puff pastry, thawed
  • 1 small tin pie apples
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • a little milk
  • a little white sugar for decoration
Using a large knife cut the two sheets of pastry into equal quarters.  Line a large baking tray (or two) with baking paper and preheat the oven to 200 degrees.  In a bowl pour the pie apples and combine with the brown sugar and cinnamon.  Mix well.  Divide the mixture up evenly into the centre of the 8 squares.  Using the milk fold the corners over so that the contents are enclosed into triangles (see picture).  Use a fork to seal the edges.  Use a pastry brush to brush the milk over the triangles, and if you wish, sprinkle with a little white sugar.  Bake for 20 – 25 minutes or until golden.  Serve with ice cream, cream and custard.
