Chicken Vol au Vents (or Pasties)

Ingredients -
6 Vol au Vent Cases - or Filo Pastry
1 onion
2 bacon rashers
1 teaspoon margarine
1 1/2 cups cooked chicken
1tbls lemon juice
1/2 cup grated cheese

Sauce -
40g butter or marg
2 1.2 tbls flour
1 1/2 cup milk
Salt and pepper

Method -
Melt marg in small pan, add chopped bacon adn onion and cook until transparent
Turn onto grease proof paper to drain
Make white sacue then add chicken and bacon to mixture and mix well.
Add a little lemon juice or vinegar to sharpen the taste
Spoon into cases and sprinkle with cheese bake in mod oven for a few mins until pastry is golden.

Variation - Omit chicken and lemon and add sauted mushrooms and sprinkle with paprika
