Chicken Cheddar Casserole

Ingredients -
1 cup rice
1 stick celery chopped
1onion chopped
3 cups chicken stock
2 chicken breast fillets  - cubed and cooked
salt
cayenne
1tbls chutney
220g grated cheddar cheese
1 egg
1/2cup milk
2 tomatoes
50g cashews

Method -
Boil rice, celery and onion in stock until liquid is aborbed.  Add chicken, salt, cayenne, chutney and half of the cheese
Sprinkle some of the remaining cheese in a greased casserole dish and pour in the chicken mixture
Beat egg and milk together and pour over top
cover with remaining cheese and arrange tomato slices around the edge
Bake in mod oven for 30 mins
Garnish with cashews that have been tossed in butter and browned until golden
