Carrot and Banana Cake

  • 90g Butter or Margarine
  • 2 Ripe Bananas, mashed
  • 1 cup white Sugar
  • 1 ½ cups Plain Flour
  • 1 Egg
  • 1 Grated carrot or 2 small ones
  • 1 tsp. Bi Carb Soda
  • 1 tsp. Mixed spice
  • 3oz Walnuts, cut into small pieces
Cream butter & sugar.  Whisk the egg and add to the butter mixture. Fold in grated carrot and mashed banana than fold in plain flour, mixed spice, bi carb and walnuts.
Bake in Moderate oven for about 1 hr to 1 ¼hrs
Serve with cream cheese icing!
