Banana Cake

  • 250 grams softened butter
  • 3 over ripe banana’s – mashed
  • 1 cup white sugar
  • 2 tablespoons golden syrup or treacle
  • 3 eggs lightly beaten
  • 1/2 cup walnuts
  • 1 cup self raising flour
  • 1 cup wholemeal self raising flour
  • 2 teaspoons ginger
  • Cream Cheese Icing
Preheat oven to 180 degrees.  Line a lamington tin with baking paper.  Cream the butter and sugar together with the golden syrup or treacle until light and fluffy.  Add the eggs and mashed bananas.   Stir in the walnuts and sifted flour and ginger.
Pour into prepared tin and bake for 30 minutes.  When cold, ice with cream cheese icing
