Apple Fritters

  • 130 grams plain flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup milk
  • 1 egg, beaten
  • canola oil for frying
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 2 large Granny Smith apples, peeled, cored and cut into 1/2cm thick slices
  • icing sugar for dusting
In a bowl, sift the flour, baking powder and salt together.  Beat in the egg and milk with a whisk.  Pour the canola oil into a heavy based pan (pour the oil about 5cm deep) and heat until a small cube of bread browns in 1 – 2 minutes.  On a dinner plate, mix together the sugar and cinnamon.  Toss the apple rings into the sugar mixture to coat.  Then dip the apple slices into the batter using a fork.  Fry the fritters in batches until golden brown on both sides – drain on kitchen paper.  Spring with icing sugar and serve with ice-cream.  Yummo!!!
