Method
- Preheat oven to 180C (160C fan forced). Lightly grease a 1L capacity baking dish. Combine flour, 1/2 cup of brown sugar and 1 tablespoon of cocoa in a bowl, making a well in the centre.
- Whisk together milk, vanilla, butter and egg. Gradually pour into well and mix. Spoon into baking dish and smooth the surface.
- Combine the remaining brown sugar and cocoa and 11/2 cups boiling water in a bowl, stirring until the sugar dissolves, then carefully pour over the pudding batter. Bake in the oven for 40 min or until firm to touch. Dust with icing sugar and serve with a drizzle of cream or ice-cream.
