Chocolate Cheesecake Muffins

Ingredients

  • 250g Philadelphia cream cheese
  • 2 eggs
  • 1 & ⅓ cups castor sugar
  • 1 & ½ cups self raising flour
  • ⅓ cup cocoa
  • ⅔ cup milk
  • 1 teaspoon vanilla essence
  • 80g butter/margarine (melted)
  • 1 cup large chocolate buttons
  • Muffin patty pans

Method

Cheesecake mix:
In a small bowl, add the Philadelphia cream cheese, 1 egg and 1/3 cup castor suger. Beat with an electric mixer. Stir in chocolate buttons. Set aside.
Muffin mix:
In a larger bowl, add the flour, 1 cup castor sugar, cocoa, 1 egg, milk, vanilla essence and melted butter. Beat well with an electric mixer.
Place paper patty pans in a muffin baking tray. In each patty pan, add a tablespoon of the Muffin mix. Then on top of that, place a large teaspoon of Cheesecake mix.
Bake in an 180 degree oven for 20 minutes. Once baked place on a wire rack to cool.
