Peanut Butter and Jelly Slice
Ingredients
100g butter, melted
1/3 cup brown sugar
1 cup plain flour
1 teaspoon baking powder
1/2 cup strawberry jam
395g can sweetened condensed milk
1/3 cup crunchy peanut butter
3/4 cup unsalted peanuts
Method
Preheat oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 16cm x 26cm slice pan. Line with baking paper, allowing a 2cm overhang on all sides.
Combine butter and sugar in a bowl. Sift flour and baking powder over butter mixture. Stir until well combined. Press mixture into prepared pan. Bake for 12 minutes or until golden. Remove from oven. Set aside for 5 minutes to cool.
Spread jam evenly over base. Place milk, peanut butter and peanuts in a bowl. Stir until just combined. Pour milk mixture evenly over jam. Bake for 30 minutes or until edges are deep golden and centre is just firm to touch. Cool completely in pan. Cut into pieces. Serve.
