Malted Chocolate Pudding with Mars Bar Custard
- 125g unsalted butter, softened
- 125g caster sugar
- 2 eggs
- 125g plain flour
- 1 tsp baking powder
- 50g malted milk powder
- 2-3 tbs cold milk
- 1 tbs cocoa powder
- 600ml carton custard
- 65g Mars bar, cut into small pieces
- 20g chopped walnuts, lightly toasted, to garnish
- Grease 1-litre pudding basin. Place butter and sugar in bowl of electric mixer, beat until pale and fluffy. Add eggs one at a time, beating well after each addition. Sift in flour, malted and baking powder. Add enough milk for a dropping consistency. Place half the mixture in a separate bowl, sift in cocoa. Place alternating spoonfuls of each mixture in pudding basin, then use a wooden skewer to gently swirl together. Cover lid with foil, and tie with kitchen string. Place an upturned plate in base of a large saucepan and stand pudding on top. Pour boiling water in pan to come halfway up sides of pudding basin. Bring to the boil, then reduce heat to low, cover and steam for 2 hours.
- Just before serving, place custard and Mars bar in a pan over low heat, stirring until bar has melted. Turn out pudding, serve with custard, and garnish with nuts.
