Banana Macadamia Dumplings with Toffee Sauce

Ingredients (serves 4)

  • 1 1/2 cups (225g) self-raising flour
  • 2 tsp cinnamon
  • 30g butter, chopped
  • 1/4 cup (40g) chopped macadamia nuts
  • 2 tsp caster sugar
  • 1/2 cup (140g) mashed banana
  • 1/2 cup (125ml) milk
  • Cream, to serve
  • Toffee sauce

  • 2 cups (500ml) water
  • 30g butter, chopped
  • 1 cup (200g) firmly packed brown sugar

Method

  1. To make the toffee sauce, combine all ingredients in medium heavy-based pan (20cm wide) and stir over a medium heat, without boiling until sugar is dissolved. Once sugar is dissolved bring to boil without stirring. Reduce heat to medium and leave to simmer for 10-15 minutes or until slightly thickens.
  2. Meanwhile, combine the flour and cinnamon in a bowl. Use your fingertips to rub the butter into the flour. Stir in the nuts, sugar, banana and milk. Drop tablespoons of the mixture into the simmering toffee sauce and simmer, covered, turning if necessary, for 15 minutes or until dumplings are cooked.
  3. Serve the dumplings with a dollop of fresh cream and some of the sauce, according to your taste.
