Sauces

Basic White Sauce

80g butter or marg
4 tbls flour
2 cups milk
salt to taste

Melt butter in saucepan, mix in flour with cool for a few secs
Gradually add milk stirring with a whisk, salt to taste...cook till thickened

Variations -
Onion sauce - Add 2 boiled and chopped white onions
Cheese sauce - Add grated cheese and some cayenne
Egg sauce - chopped hard boiled egg whites - good for fish

Tomato sauce

4 -5  tomatoes
1 onion - chopped
1 rasher bacon - chopped
1tbls butter or marg
1 1/2 cups chicken stock
2 tsp sugar
1tsp tomato paste
salt and pepper
1tbls cornflour
lemon juice
mixed herbs

Fry onion and bacon in butter till soft, add chopped tomatoes and cook for 2-3 mins, add stock, sugar sald and pepper, lemon juice and herbs and simmer for 10 mins.  stir in cornflour and allow to thicken - check seasoning.  Blend in blender

Can be used with mince or sausages or rissoles and things
