In a large bowl mix:
2 cups SR flour
1 large carrot, peeled & grated
1 zucchini, grated
100g chopped ham
1 1/4 cups grated cheese
Then add:
1/2 cup milk
3 eggs
60g cooled melted butter (MUST BE COOLED)
Add the wet ingredients to the dry & divide into 12-14 muffin cases (or 24 mini muffin cases). Bake at 160 degrees for approx 30mins. Check with a skewer to make sure the centre is cooked, keeping in mind that the cheese will be melted & may end up on the skewer =D ENJOY!
You can also make them with peas/corn instead of carrot/zucchini (or really any other veggie).
