- 4 hard boiled eggs, halved
- 1 tablespoon mayonnaise
- 1 tablespoon parsley
- 1/2 teaspoon mustard or curry powder
Carefully scoop out the yolks and place in a bowl. Mash them lightly with the mayonaise, parsley and mustard or curry powder. Either spoon or pipe the mixture back into the halved eggs and chill until ready for use. Sprinkle the finely chopped parsley over the top. Keep refrigerated before serving.
