Coconut Impossible Pie

  • 4 Eggs
  • 1 Cup Coconut
  • 1/2 Cup Self Raising Flour
  • 2 teaspoons vanilla extract
  • 2 cups milk
  • 1 cup caster sugar
  • 1/2 cup melted butter
In a large bowl beat the eggs together and add remaining ingredients.  Pour mixture into a pie dish and bake for 45 minutes to 1 hour in a 180 degree oven.   Don’t worry if mixture seems too runny.  After cooking, you will end up with a three layered custard – base, custard fillig and brown coconut top.  Serve with ice cream.
