Ingredients -
3 carrots cut into chunks
2 onions - diced
2 chicken breast fillets - cubed
1 1/2 tbls flour
3 tbls butter or marg
Salt and pepper
2 cups chicken stock
parsley and mixed herbs to taste
Sauce
2tbls flour
1/1/3 cups milk
salt
pinch nutmeg
pinch cayenne pepper
3/4 cup grated cheese
Method -
Par boil carrots and onions
Toss chicken in flour and brown in butter
Transfer into casserole dish add salt, pepper, stock, vegies and herbs
bake in mod oven for 1 1/2 hours until tender
Remove chicken and veg and put stock into saucepan, blend flour and some milk and stire into stock
Add remaining milk and stir into stock
Add cheese and stir until melted, pour over chicken and veg and sprinkle with parsley
Serve with salad
