Baked Ham Cheese and Egg Muffins

  • 6 slices of ham
  • 6 eggs
  • 40 grams grated cheese
  • 100 grams ricotta
  • Chopped parsley
  • Salt and Pepper
Grease a muffin tin for six or six ramekins well with canola oil.  Place a slice of ham in the bottom of each ramekin. In a bowl, mix the ricotta, grated cheese and chopped parsley.  Divide evenly into the six muffin tins.  Crack an egg into each.  Bake at 180 degrees for about 15 minutes.  Serve with thick crusty toast and a hot cup of coffee!
